Some of the most memorable ones aren’t in the newest, flashiest spots either. They’re in old cafés near Mexico Square, around the Ethiopian National Theatre, or tucked into the busy Piazza area, places where baristas have been pulling shots for decades. Watching them work feels like watching a small, unhurried performance. Milk steams, espresso flows, foam settles. Outside, Addis moves fast. Inside, for a few minutes, the world slows down. Nobody is rushing you. Nobody is asking if you want room for cream.

And it’s not just Addis

Great macchiatos aren’t exclusive to the capital. You can find them in smaller cities, roadside stops, and tiny hotels deep in the countryside. Some of the best I’ve had were in Bonga (Kaffa zone) and in Yirgacheffee, which, if you know coffee, you already know that name.

It proves a point: incredible beans alone don’t guarantee an incredible cup. I’ve been to countries sitting on beautiful coffee that somehow still manage to disappoint. (You know who you are.) Ethiopia, almost everywhere you go, gets it right.

If you spend enough time in an Ethiopian café, sooner or later you will hear someone order a “Buna 1Shai 2Spris.”

The waiter nods. A glass appears.

Half golden tea. Half dark coffee.
Two drinks. One glass. One very Ethiopian idea.

Spris 3may not be as famous as the traditional Ethiopian coffee ceremony, but in modern Ethiopian cafés it has become a small cultural icon. It is a drink that quietly reflects the country’s creativity, café culture, and love for both coffee and tea.

The Meaning Behind the Name

The word Spris (sometimes written Spriis or Espris) comes from the Amharic word meaning “mix” or “mixture.”

The name describes the drink perfectly. It is a blend of coffee (buna) and tea (shai) served together in the same glass.

Some historians believe the word may also have been influenced by the Italian word spruzzato, meaning splashed or mixed. This linguistic trace likely dates back to the Italian presence in Ethiopia in the mid twentieth century, a time that also helped introduce espresso machines and modern café culture to Addis Ababa.

Language travels with people. Sometimes it leaves behind a word. Sometimes it leaves behind a drink...😉

A Drink Born in Ethiopian Cafés

Unlike the traditional Ethiopian coffee ceremony, which takes place at home and unfolds slowly with roasting, grinding, and brewing, Spris belongs to the café.

But Ethiopian coffee ceremonies are not only found inside homes. They are also part of everyday street life. In many cities you will find women roasting coffee on small charcoal stoves along sidewalks and markets, serving fresh buna to passersby.

Spris, however, emerged from a different space. It grew with urban café culture.

As café life expanded across Ethiopian cities, especially in Addis Ababa, cafés became places where people gathered for quick conversations, study sessions, or a short break during the day.

Spris appeared as a practical and creative café drink.

It combines the boldness of coffee with the lighter character of tea, creating something that sits comfortably between the two.

How Spris Is Made

The preparation is simple but visually beautiful.

First, black tea is poured into a clear glass.
Then black coffee is slowly added on top.

If done carefully, the liquids separate into two layers.

The result is striking. Golden tea below and deep brown coffee above.

Most cafés serve it sweet, often with a generous spoon of sugar that softens the bitterness of coffee and the tannins of tea. Milk is rarely added.

Some people stir it before drinking. Others prefer to sip it slowly and let the flavors blend naturally.

A Student’s Secret Weapon

For many Ethiopians, Spris is more than a café drink. It is also a student survival tool.

For me, it always brings back memories of university dorm life.

During exam season, when long nights turned into early mornings, Spris became our favorite waking agent. When the textbooks started to blur and sleep tried to win, we knew exactly where to go.

At Addis Ababa University there was a small student café behind Kennedy Library that stayed open late. Sometimes until four in the morning.

We would walk there half asleep, order a glass of Spris, and hold the warm glass while the caffeine slowly did its work.

Then we would head straight back to the library. Kennedy, the postgraduate reading rooms, or any study space that stayed open late.

And trust me, it rarely fails.

One glass of Spris and suddenly the night does not seem so long.

The Drink of Readers and Café Thinkers

Spris also has another home in Addis Ababa’s café culture.

Around the Mexico area and near the National Theatre, it is common to see people sitting in cafés with a book in one hand and a glass of Spris on the table.

Readers, students, and writers often gather in these cafés, moving between pages and slow sips of coffee and tea mixed together.

Alongside the famous Ethiopian macchiato, Spris has quietly become one of the drinks that accompanies long conversations, reading sessions, and slow afternoons in the city.

But the story of Ethiopian macchiato is fascinating on its own. That is a story for another day.

Ethiopia’s Other Underrated Drink

One thing that often gets overlooked is Ethiopian tea.

While the world celebrates Ethiopian coffee, and rightly so, the tea grown in Ethiopia is also remarkably good. It is smooth, aromatic, and often enjoyed with spices. It has its own quiet place in everyday life.

Now imagine combining premium Ethiopian coffee with quality Ethiopian tea in the same glass.

That is Spris.

Two beautiful drinks, each strong in its own way, meeting in the middle.

A Small Glass That Carries Memories

Some drinks wake you up. Spris keeps the night going.

For many of us it carries memories of student life, late night studying, quiet cafés, and the soft hum of university campuses when most of the world is asleep.

A glass of tea and coffee layered together may seem simple, but in Ethiopia it represents something deeper. The creativity of café culture and the everyday rituals that shape our lives.

Somewhere tonight, in a university café or a small pastry shop, a student is probably holding a warm glass of Spris, preparing for another long night with books and notes spread across a table.

In Ethiopia, when we invite someone out, we often say “Shai buna?”4

Mankeshkesha (ማንከሽከሻ) – A small, round shaped metal pan used specifically for roasting green coffee beans over charcoal.

In Ethiopia, coffee is a culture, not just a beverage. It is a ritual, a rhythm, a gathering. It is a daily ceremony where time slows down and life unfolds cup by cup.

Waking Up to the Sound of Roasting Beans

I never needed an alarm clock growing up like any other Ethiopian kid. My mornings began with the sound of green coffee beans shaking inside a metal pan called Mankeshkesha or Biret Mitad1. That soft, steady clatter, beans dancing against heat, was my mother’s way of saying wake up, the day has begun.

It begins with a small handful of raw green beans placed into a pan over glowing charcoal. As the heat builds, the beans are gently tossed and turned, allowing their thin outer skins to loosen and fall away. The careful shaking keeps them from burning and ensures they roast evenly. Slowly, their color deepens from pale green to a warm brown, releasing that first crackle and the unmistakable aroma that fills the room.

In Ethiopia, this step is never skipped. Coffee is roasted fresh for every ceremony. Buying pre roasted beans for home use is uncommon because the roasting is not just preparation, it is part of the experience. Watching the beans transform, hearing them crack, and breathing in their fragrance is something everyone shares before the first cup is ever poured.

As soon as the roast was perfected, we kids had our responsibility. My mother would carefully lift the pan of freshly roasted beans and hand it to us to carry around the room. One by one, we would present the hot, smoking beans to each guest so they could inhale the aroma. This step is not optional. It is part of the culture. Smelling the fresh roast is the first part, even before drinking. After everyone has breathed in that rich fragrance, we return the beans to cool slightly.

To grind the roasted beans, a traditional mortar and pestle is used. The heavy bowl is called a muqecha2, and the pestle, known as a zenezena3, is a wooden or metal cylinder with a blunt end. The beans are crushed rhythmically by hand into a coarse grind. The grinding task can be delegated to us children, and we take it on joyfully and proudly.

Modern electric grinders exist today, but traditional Buna does not depend on them. The ceremony keeps its character through simplicity, patience, and hands that know the rhythm.

By this time, water in the Jebena is heating. The Jebena4, a hand shaped clay pot, is truly the heart of the ceremony. Carefully crafted and fired by artisans, it is designed specifically for brewing coffee. Most households use charcoal to heat it, giving the process a slow, steady warmth and a distinctive aroma.

The freshly ground coffee is added to the hot water in the Jebena, brought to a boil, then removed from the heat at just the right moment.

Serving the Coffee

Once the coffee boiled in the Jebena and was ready to serve, another duty began. The mother would pour the coffee into small cups called sini5, and we children delivered them in order of respect.

The first cup round called Abol6, which nobody misses, always goes to the grandparents, then to the eldest or the father figure, and then to each person according to age, ending with the youngest adult. By any chance, if there is a coffee shortage due to many guests, only elders and guests are served the Abol, not the host.

Children were not allowed to drink coffee, so we were given qimem shay7, a spiced tea, or we simply enjoyed the Buna Qurs8 while waiting for the second round, Tona9, to be prepared and delivered. Finally came the last round, Bereka10, the blessing that gently closed the gathering.

Coffee takes time, and in Ethiopia we give it time. Buna11 is never rushed.

The Setting: Grass and Incense

The ceremony is not only about the coffee itself but also about the environment created around it.

Fresh green grass is often spread on the floor beneath the entire setup. This is not decoration alone. The grass symbolizes freshness, renewal, and respect for guests. It brings the feeling of nature indoors and marks the gathering as something special.

Incense, often called chis, is indispensable. It burns slowly throughout the ceremony, filling the space with a warm, resinous scent. The incense purifies the atmosphere and signals that something meaningful is happening. The smell of roasted coffee mixed with charcoal and incense is unmistakable. For many Ethiopians, that combination of aromas immediately feels like home.

“Buna Dersoal!”

When the coffee was ready, my mother would look at me and say, “Go call the neighbors. Buna dersoal.”13 Coffee is ready.

I would run outside and announce it proudly. The neighbors would drop whatever they were doing. Laundry could wait. Injera could wait. Conversations could pause. Because coffee must be drunk hot.

In Ethiopia, you never drink coffee cold. We even have a saying, “Buna ena fikir betekusu.” 14Coffee and love are best when they are hot. Coffee is alive when it is hot, just like affection and connection. It must be shared in the moment.

Three Times a Day, Not Once

If you think the coffee ceremony happens only once a day, you would be wrong. In my household, Buna was prepared three times a day: morning, afternoon, and evening.

Morning Buna woke the house. Afternoon Buna carried discussions, neighborhood updates, and sometimes a little gossip, or what I call information exchange between mothers. Evening Buna softened the day.

By the time parents slowly sipped the third round, Bereka, we children were already drifting to sleep. The scent of roasted coffee mixed with incense floating through the house felt like a lullaby. The day began and ended with Buna.

Abol, Tona, Bereka

The ceremony unfolds in three rounds.

Abol is the first and strongest, bold and awakening.
Tona is the second round, smoother and more relaxed, where conversations deepen.
Bereka is the final round, gentle and comforting, a blessing before parting. By this time, the coffee is usually lighter and watery.

Each round is not simply a refill. It is a continuation of connection.

Buna Qurs: Coffee Never Comes Alone

Coffee is never served alone. There is always Buna Qurs, the small bites shared alongside the cups.

Depending on the household or region, it could be popcorn, kolo which is roasted barley or grains, anebabero15, dabo qolo16, or dabo which is bread. Whatever you have and whatever your area offers becomes part of the ceremony. Hospitality is not about luxury. It is about sharing.

One of my favorites was Ye Nug Lit Lit17. Dark nigel seeds are roasted slowly until fragrant, then beaten until they become sticky. As their natural oils begin to release, they turn glossy and can be molded into small shapes. They are rich, slightly bitter, and deeply aromatic. Served with kolo or popcorn, they balance the bitterness of coffee beautifully.

It is healthy, simple, and deeply satisfying

More Than a Beverage

The Ethiopian coffee ceremony is not about caffeine. It is about patience, presence, hospitality, storytelling, laughter, disagreement and reconciliation, and even gossip that binds communities together.

It is where neighbors become family. Where advice is offered with or without invitation. Where family and friends confined in each other find solutions and reconcile sour relationships. Where silence is shared without discomfort.

Coffee is brewed slowly because relationships are built slowly.

The Heart of It All

The Buna ceremony is not just a three-round coffee drinking session. It is the sound of beans shaking at dawn. It is running outside shouting “Buna dersoal.” It is neighbors walking in without knocking. It is fresh grass underfoot. It is incense rising slowly into the air. It is popcorn passed from hand to hand. It is parents sipping Bereka while children fall asleep.

It is Ethiopian life in motion!

And as we say, coffee and love are best when they are hot, and we are good at keeping them hot.🔥🔥

Tenadam 1It was simply there. In the garden. In the kitchen. In the coffee. And sometimes, in your small hand when your great grandmother told you to chew it.

Not because it tasted good. Honestly, it tasted terrible.

I remember standing there, looking at the tiny seeds in my hand, already suspicious. I knew this was not going to be a pleasant experience. But in an Ethiopian household, refusing was not really an option. So I chewed.

My face said everything. My great grandmother laughed. My mother said, “It will help.”

And it did.

This is how many Ethiopian children first experienced tenadam. Not as a flavor. Not as a coffee note. But as their first traditional medicine, given with confidence and a small smile that said, you will understand later.

The meaning behind the name

In Amharic, tena adam means “the health of mankind.”

This is not just a symbolic name. It reflects how the plant has been understood for generations. Tenadam, known botanically as Ruta chalepensis, is considered a medicinal herb and an essential part of daily life.

It was not grown for decoration. It was grown to be used. It existed to heal, to support food, and to accompany coffee.

A quiet but essential ingredient in Ethiopian food

Tenadam is a quiet but essential ingredient in Ethiopian cooking. Its leaves and seeds are used in traditional spice blends, like shiro powder, adding depth and balance without ever dominating the flavor. Most people can’t immediately identify it in a dish, but its absence changes everything ,its subtle presence holds the flavors together.

As a child, I discovered this magic in a cup of tea. I used to think of it as ye leqsobet shay 2tea made during mourning. I remember trailing our mothers in the kitchen with the neighborhood kids, receiving a small cup of tenadam tea and a piece of bread to keep us calm and quiet at the funeral home. The tea was warm, fragrant, and comforting, and sipping it made me feel grown-up, part of a quiet ritual that carried care and connection.

Even now, I think of tenadam the same way: indispensable, quietly enhancing everything around it, whether in a simple cup of tea or a complex spice blend.

Caught in the warmth of that tea memory, I nearly forgot the coffee in front of me…so where was I?

During the jebena brewing process, fresh leaves are served beside the cup or already dropped in your cup of coffee (this It doesn’t happen often) as the coffee gets bitter if you miss the timing of dipping or forget it longer than you should longer, I mean 30 seconds… hahaha!

Its purpose is not to change the identity of the coffee, but to enhance it.

It adds a fresh herbal character and increases the complexity of the cup.

Adding tenadam to coffee is also a gesture of care and hospitality.

Don’t worry !! we don’t drop tenadam into every coffee we brew, like espresso or cappuccino… we’re not that crazy 😜

Describing tenadam as a coffee cupper

As Ethiopian cuppers, describing tenadam is straightforward because it is part of our sensory vocabulary. We grew up tasting it, smelling it, and recognizing it.

The challenge comes when working with international teams who have never encountered it.

I experienced this during cuppings with colleagues in France. When I described a coffee as having tenadam characteristics, the reference was not immediately understood. I had to explain the flavor in terms that could be recognized outside Ethiopia.

Botanically, tenadam belongs to the same family as rue, and this provides the closest reference point for many European tasters.

In coffee, tenadam contributes:

• A fresh herbal aroma

• A slightly bitter but clean edge

• A green, lively character

• A subtle medicinal quality associated with traditional herbs

It does not mask the coffee’s origin character. Instead, it adds complexity and freshness.

A culturally specific sensory reference

This experience highlights an important aspect of coffee tasting: flavor references are often local.

Cuppers describe coffee using the ingredients, plants, and foods they know. Ethiopian cuppers may reference tenadam in the same way others reference herbs that are familiar in their own regions.

Understanding these references requires more than translation. It requires cultural context.

Tenadam is not only a plant added to coffee. It represents a connection between Ethiopian agriculture, food, traditional medicine, and coffee culture.

Its name “the health of mankind” reflects how deeply it is integrated into daily life.

But now, let’s be honest.

How many times am I supposed to drink tenadam?
And how many cups of coffee are we talking about exactly?

Because in the Ethiopian Abol, Tona, Bereka coffee ceremony… one cup is never just one cup.

It’s three. Minimum.
Refusing is not really an option.
And somehow, your grandmother is still watching to make sure you finish all of them.

So here we are....

If salt in coffee made you pause, butter might make you blink twice. But this isn’t a modern experiment or a trend born on social media. Long before it appeared in wellness blogs, coffee with butter existed as nourishment, ritual, and daily life.

In Ethiopia, coffee and butter have met in the same cup for generations.

After the coffee is roasted, ground, and slowly boiled in the jebena, it is poured while still hot. Then, a small amount of butter is added. It melts instantly, softening the coffee’s edges and giving it a fuller, rounder body. The taste is not greasy, as people often expect, but balanced and rich without losing the character of the coffee itself.

In many highland communities, this was never about indulgence. It was practical. Butter added calories and warmth, turning coffee into something that could sustain a person through long mornings of physical work, travel, or cold air. It was both comfort and fuel.

But meaning lives here too.

Offering coffee with butter can signal care, generosity, and respect. It reflects attention, to the guest, to the ingredients, and to the moment being shared.

In the southern Oromia region, among the Guji people, this relationship takes a deeper form in a tradition called Buna Qalaa. Often translated as “slaughtered coffee,” it refers to whole coffee beans simmered with butter and milk, sometimes eaten as much as drunk. It is prepared during ceremonies, blessings, and important gatherings, where it represents well-being, fertility, and community connection.

It reminds us of something easy to forget: coffee was not always just a beverage.

For some, it was sustenance first.

Oral traditions describe coffee mixed with butter and carried during journeys, valued for the strength it provided. Long before coffee became a global drink defined by flavor notes and brewing methods, it supported people in more direct ways.

Even today, adding butter to coffee exists quietly within Ethiopia’s broader coffee culture. Not everywhere. Not every day. But enough to remain part of its living memory.

Because here, coffee was never separate from life.

It was part of surviving it.

And sharing it

So… Why Butter in Coffee?

Part of the answer is cultural. Part of it is practical. And part of it, interestingly, is scientific.

Butter is almost entirely fat, and fat slows digestion. Research shows that fat can delay gastric emptying, meaning caffeine may be released more gradually into the bloodstream rather than all at once. This can create a longer-lasting sense of energy and fullness compared to drinking black coffee alone.1

A scientific review published in the American Journal of Clinical Nutrition explains that dietary fat increases satiety and slows energy absorption, which may help explain why butter coffee feels more sustaining than regular coffee.2

At the same time, nutrition researchers emphasize balance. Butter is high in saturated fat and calories, and while it can provide energy, it does not offer unique cognitive or metabolic benefits beyond its caloric value. Its effects depend on the overall diet, lifestyle, and individual health.3

In other words, butter doesn’t make coffee magical.

But it can make it sustaining.

Which is exactly how it has been used for generations.

A Blend of Tradition and Perspective

Today, butter coffee appears in many forms, from Ethiopian homes to modern cafés to global wellness trends.

But its meaning is not the same everywhere.

In Oromo communities, preparations like Buna Qalaa are not trends. They are part of ceremonies, identity, and shared life.

They tell a quieter story.

One where coffee was not only about taste.

But about strength.

And if you thought salt and butter were surprising companions for coffee…

Somewhere between your first sip of coffee and your second raised eyebrow, you hear it: “Did you say salt?”
Yes. Salt. In coffee. In Ethiopia, this isn’t a trend, a dare, or a wellness hack. It’s a memory. A tradition. A way of drinking buna that predates sugar, syrups, and social media opinions.

Ethiopia is the birthplace of coffee, but more importantly, it is the birthplace of coffee as culture. Here, coffee was never meant to be rushed, sweetened beyond recognition, or consumed alone. It was brewed slowly, shared generously, and sometimes, very deliberately seasoned with salt. little secret passed from neighbor to neighbor…..not gossip😉 a whisper over the steam of the cup, just between friends .

Coffee Before Sugar: Understanding Ethiopian Buna Culture

Long before sugar became widely available, Ethiopians were already drinking coffee. 1Buna was valued for its warmth, its strength, and its ability to gather people together. In many regions, especially rural areas, sugar was scarce. Salt, however, was present and practical.

Coffee wasn’t dessert. It was nourishment. It was conversation. It was ceremony.

Enter the 2jebena, the clay coffee pot that sits at the center of Ethiopian coffee tradition. The jebena doesn’t just brew coffee; it holds stories. Every pour carries history, and every variation reflects place, time, and family habit. Salted coffee is one of those variations, passed down quietly, without explanation because it never needed one.

So… Why Salt in Coffee?

Let’s demystify it.

First, salt reduces bitterness. A tiny pinch can soften harsh notes and make coffee taste smoother. This isn’t folklore, it’s chemistry. But Ethiopians didn’t need lab studies to know this. Taste taught them.

Second, it reflects resourcefulness. Ethiopian coffee culture grew from what was available, not what was fashionable. Salt wasn’t a substitute for sugar; it was its own choice.

Third, it’s cultural. In some communities, adding salt to coffee is simply how it has always been done. It signals familiarity, not shock value. You don’t drink it to impress, you drink it because your grandmother did. Which was the case for me.

And no, not every Ethiopian drinks coffee with salt. Ethiopia has dozens of coffee cultures, not one. Some prefer sugar, some drink it plain, and some still keep the salted cup alive. especially among elders.

A Pinch of Science: How Salt Actually Reduces Bitterness

There is a scientifically validated mechanism behind what many coffee lovers intuitively experience. Research in taste science shows that sodium, the primary component of salt can suppress the perception of bitterness at the level of taste receptors on the tongue. In controlled sensory studies, scientists found that when salty compounds like sodium chloride are present with bitter substances (including caffeine and other bitter tasting molecules), the perceived intensity of bitterness can be reduced, even though the salty taste itself doesn’t fully dominate. This occurs because sodium ions interact with bitter taste receptors, diminishing their signaling and allowing sweeter and more pleasant notes to register more clearly on the palate.

The First Sip: An Honest Warning

If you try salted coffee for the first time, you may pause. That’s normal. Then you may sip again. Also normal. Somewhere between confusion and curiosity, something clicks. The coffee tastes rounder. Deeper. Less sharp. Not salt, just grounded.

Your Cup Isn’t Ready… Butter Is Coming

46 km of anticipation before coffee’s whispered history

Once upon a cherry… No, seriously. Somewhere in Ethiopia, a goat snacked, humans noticed, and suddenly the world couldn’t get enough. Welcome to where it all began (or almost). On the bumpy road from Jimma toward Bedele, about 46 km in, you’ll find Choche, a quiet place that reminds us that coffee may not have a single birthplace, but it leaves footprints. Follow them, and you’ll find stories, trees, and maybe a curious goat or two.

The journey isn’t just about the destination. Along the way, monkeys appear along the roadside, peeking curiously and occasionally asking for snacks. They seem to know that something magical is coming, the forests ahead, the coffee waiting, and maybe a few stories they can keep for themselves.

Arriving in Choche, Goma Woreda, Jimma Zone, a simple billboard quietly points the way. From there, you walk about one kilometer through farmland and into the forest, where coffee doesn’t grow in neat rows but exists the way it always has, wild, shaded, and patient.

In the Choche forest, the trees are densely shaded, and forest coffee grows quietly below. Monkeys sit on the branches above, looking down at passersby as if judging who is worthy of tasting these ancient beans.

Here, there is a simple monument that locals say marks Kaldi’s footprint. Nothing grand. Nothing dramatic. It is simply present in the way old things often are. Built from concrete, it is partly swallowed by long, untended grass and plants that have grown freely around it. Nearby stands a small room meant to serve as a museum. Each time I visited, it was locked, offering no glimpse of what might be inside.

The elderly sheikh who watches over the place is kind and generous with his time. He speaks with a warm smile as he explains the story of coffee, the seasons, and other local tales passed down through generations. His words feel less like instruction and more like memory.

For the locals, Choche is traditionally associated with the legend of Kaldi or Khalid, as some elders still call him, the 9th-century goatherd who noticed his animals growing unusually lively after chewing the red berries of a wild bush. Frisky. Dancing, even. According to the tale, this was the moment humans first recognized the stimulating power of coffee. A story repeated so often it has settled into the landscape itself.

Nearby, a dark brown goat lingers, easy to miss at first, blending into the earth and brush, almost as if keeping watch over the forest that once fed its kind. No signs. No spectacle. Just land that seems to remember.

The road leaves Choche behind, tiptoeing into Kaffa, where the beans have paperwork to prove their age.

Not far from Jimma lies Bonga, the name that echoes louder in history books and coffee conversations alike. The capital of Keffa, wrapped in dense forests, Bonga is often called the ancient heart of Arabica, a place where coffee didn’t need to be planted because it simply grew. Its story is older, broader, and more widely told, shaped by forest canopies and generations who lived alongside coffee rather than above it.

Many scholars and coffee lovers believe that the word “coffee” or “café” in French may actually derive from Keffa, or at least its long association with the bean that conquered the world. So when you sip your espresso, your cappuccino, or your jebena-brewed cup, you’re holding a little piece of history from Bonga’s forests. If Bonga feels like the library of coffee’s past, then Choche feels like a handwritten note tucked between the pages, personal, local, and easily missed.

At Jimma University, Kaldi’s sculpture stands proudly, a playful nod to a legend that still lives in the forests and farms nearby.

Kaldi keeps watch in bronze form, reminding us of the legend that started it all.
